Blackberry Prosecco Popsicle
20 oz Prosecco
1/3 cup blackberries
4 oz creme de cassis
splash of fresh lime juice
2 pinches lime zest
Place blackberries in a bowl and pour creme de cassis on top and toss to coat. Muddle the berries, add lime juice and zest, and toss to combine. Measure about 1 tsp of the berry mixture into the bottom of your popsicle form and pour Prosecco on top. Freeze for about 2 hours or until mixture starts to solidify. Insert popsicle sticks and finish freezing overnight.

Strawberry Peach Vodka Popsicles
6 oz pureed strawberry (about 10 strawberries)
2 oz peach syrup*
12 oz tonic water
2 oz plus 3 oz vodka (divided use)
Stir strawberry puree with 2 oz vodka. Place 3 tsp of strawberry mixture in the bottom of a popsicle form. Set aside. Stir peach syrup with tonic water. Add vodka and stir to combine. Pour peach and vodka mixture over strawberry mixture and stir to combine. Freeze for about 2 hours or until mixture starts to solidify enough to hold a popsicle stick upright. Insert popsicle sticks and finish freezing popsicles overnight.
To make the peach syrup:
1/2 cup sliced peaches (about 4 peaches)
1 cup water
1 cup sugar
Wash, peel, and pit peaches. Place peaches in a blender until peaches are pureed. Place water, sugar and peach puree in a pot and bring to boil for 5 minutes. Allow to cool.
