Blackberry Prosecco Popsicle
20 oz Prosecco
1/3 cup blackberries
4 oz creme de cassis
splash of fresh lime juice
2 pinches lime zest
Place blackberries in a bowl and pour creme de cassis on top and toss to coat. Muddle the berries, add lime juice and zest, and toss to combine. Measure about 1 tsp of the berry mixture into the bottom of your popsicle form and pour Prosecco on top. Freeze for about 2 hours or until mixture starts to solidify. Insert popsicle sticks and finish freezing overnight.
- Strawberry Mojitos
1.5 ounces of simple syrup
about 3 fresh strawberries
about 4-5 fresh spearmint sprigs (chopped if you prefer smaller mint pieces in your cocktail)
soda water
1/2 lime
2 ounces of light rum
In a chilled glass, muddle the simple syrup, strawberries, and mint leaves together. Squeeze the juice from the lime into the glass, add the rum and stir well. Fill glass with ice and top with soda water. Garnish with mint sprigs and strawberry slices. Makes 1 drink.
1800 Sunrise Sangria
1 orange
1 lime
1 750ml bottle pink Prosecco, or some other sparkling wine
1 cup 1800 tequila
2 cups sprite or ginger ale
1 Bosc pear, cored and cut into 1/2 inch pieces
1/2 pint raspberries
Slice half the orange into circles then slice in half to form half moons. Squeeze the second half into a large pitcher filled with ice. Do the same with the lime. Add the Prosecco, soda, and the 1800 to the pitcher and gently combine. Add fruit and serve.
